পালিশ করা এই চালে খাদ্যগুণ অর্থাৎ মিনারেল, ভিটামিন, ফাইবার, প্রোটিন অ্যান্টি-অক্সিডেন্ট কিছুই আর অবশিষ্ট থাকে না। স্বাভাবিকভাবেই পুষ্টিহীন এই চালের ভাত খেতে অভ্যস্ত হয়েপড়লে কোলন ক্যান্সার ও ডায়াবেটিস এর মতন মারনরোগের ঝুঁকি বেড়ে যায় । এছাড়াও রক্তচাপ বৃদ্ধি, অতিরিক্ত মোটা হয়ে যাওয়া এবং বাধ্যক্য দ্রুত আসতে পারে বলে সতর্ক করেছেন কৃষি বিজ্ঞানীরা ।
